Cinco de Mayo is a great time to explore Mexican culture and cuisine. Whether you throw a big Fiesta or a little party with your family, it’s sure to be a fun time!
Baked Ground Beef Taquitos are perfect for a party because they’re filling and can be eaten with your hands. I also chose to bake the taquitos because you can bake a big batch of these all at once. Frying them will result in a crunchier taquito, but you’ll have to do it in batches. Serve these alongside some guacamole, salsa, sour cream, or shredded lettuce and tomatoes.
Tips for Baking the Taquitos:
-Before you start rolling your taquitos, place tortillas individually in the oven while it’s preheating for a few minutes until they become soft. Or you can place them in a stack of 5 in the microwave between 2 damp paper towels for about 20 seconds. Warming the tortillas will make them easier to roll.
-Use a pastry brush and oil or cooking oil spray, and make sure the taquitos are evenly coated in oil. If they start breaking while baking, add more oil.
-Bake them in a stoneware dish, these conduct heat more evenly.
-You can keep the taquitos warm in the oven at 250 degrees and cover with foil.

1 lb Ground Beef
1 Packet Low sodium taco seasoning
1 Can Refried Beans
1 Cup Shredded Mexican cheese blend
18 Corn tortillas
Oil or cooking oil spray
Condiments: Guacamole, Salsa, Sour Cream, Lettuce, or Tomato.
Preheat oven to 400 degrees. Place tortillas in a single layer on oven racks and allow to warm while the oven is preheating. You want them to be warm and soft.
Grease a large stoneware dish with oil or use a large rimmed baking sheet.
Brown Ground beef in a skillet, add taco seasoning and water.
Set up a station with the refried beans, ground beef, and cheese. Spread an even layer of beans on the tortilla, this will act as the glue. Then place a spoon of ground beef, and top with shredded cheese. Roll tightly and place seam side down onto the baking dish.
Have a little space between each taquito. Once they are all rolled, spray an even layer of cooking oil spray or brush oil on each taquito.
Bake for 15-20 minutes until they are slightly brown and crispy.
